Epidemiological characteristics of Salmonella food poisoning
- Caused by oral ingestion of non-typhoid Salmonella contaminated food. The common foods that cause disease are mainly animal foods, mainly animal meat, poultry, eggs, milk and their products.
Clinical manifestations of Salmonella food poisoning
- The incubation period is generally 6 to 48 hours. The main symptoms are nausea, vomiting, diarrhea, abdominal pain, and fever. Acute diarrhea is dominated by yellow or yellow-green watery samples with a foul odor. Severe cases can cause convulsions, dehydration, shock, and even death, and are more common in the elderly, infants and frail people. The course of disease is usually 3 to 7 days. Children, chronic diseases, and people with low immunity have severe symptoms such as high fever, chills, anorexia, and anemia. Can cause inflammation of many organs, such as meningitis, osteomyelitis, cholecystitis, endocarditis and so on.
Management of Salmonella food poisoning in patients
- Stop eating suspicious food immediately. Send the patient to the hospital for treatment in time. Mild cases are mostly self-limiting diarrhea, and supportive therapy is generally used. Antibacterial drugs are not recommended. Severe cases are treated with antibacterial drugs and symptomatic treatment is performed at the same time.
