What are Le Parfait Jars?
Parfait, a traditional specialty pastry, was created by the chef Jiang Zhongyu of Huaiyuan Town during the Republic of China. Its manufacturing process is traditional and unique. The rice is soaked and ground into a slurry, then the glutinous rice that has been blanched with boiling water is steamed, then the two are combined into a tank to ferment, and finally lard and brown sugar are added. The finished product is white and yellowish, moist and soft, and elastic; loose foaming residue, oily but not greasy, sweet and slightly sour.
