What are vegetarian enchilada?

Some vegetarian enchilada are overrun and placed in a bowl with grated cheese such as Monterey Jack or Cheddar. WITHCojita and QueSo anejo are two cheeses commonly used on Enchilada in Mexico. The cheeses are aging and usually disintegrate into the filling or above Enchiladas.
Enchiladas is usually baked in the oven until the cheese is melted. However, not all Enchilada must be baked. Some are simply filled with cheese or other vegetarian filling and rolling and then eaten without further heating.
