What is chocolate crepe?
Crepe is a thin, circular pancake that is usually made of wheat or buckwheat. The dough is evenly poured into a hot pan or plate and then rotates with a spatula until it is boiled. Chocolate crepe is simply a pancake that was filled with molten chocolate. Sometimes other ingredients such as fruit, syrup or cream are included in chocolate. The pancake is then inverted and sealed to cover the chocolate filling.
The preparation and cooking of chocolate crepe is a relatively easy task, but it can take up to an hour and fifteen minutes to complete. Pancake dough is first mixed in a kitchen robot until smooth in consistency. The mixture is then cooled for about an hour. While the dough cools, chocolate melts in a pan and sometimes mixes with other ingredients such as cream cheese and sugar. The filling is postponed and kept warm when the pancake is made.
In the middle and pan is then tilted so that the dough covers the entire lower surface. The pancake then turns and cooks for a few seconds dÉle until it is dry and then removes and placed on the stand. Another amount of dough is poured into the pan and the process is repeated. The pancakes are stacked and used by ointment paper as dividers between them to avoid sticking together.
Once the pancakes are completed, the chocolate filling is a teaspoon to the center of each. At this point, the chocolate crepe can be spilled with a cream or a fund sauce or virtually any other topping that the chef desires. The pancakes are then carefully rolled up or simply hosted to freely cover the chocolate filling. Molten chocolate and other ingredients are usually poured over the top of the crepe to complete the presentation.
