What is Phyllo?

Phyllo is a fine dough used in many types of kitchen. It is made of fine wheat flour mixed with water and oil. Jabs, vinegar or flavored crayfish can also be added to the mixture for certain meals. The unleavened dough then rolls into paper leaves and dusted with flour. Phyllo dough is usually used in multiple layers, either as a cover for different fillings or as part of a layered bowl.

The word "phyllo" means "sheet" in Greek and sometimes philo or filo is spelled. In Turkish he is known as Yufka. Phyllo is part of the kitchen throughout the Mediterranean and in the Middle East, where it is used in sweet and salty meals.

The layered dessert known as Baklava is common for many kitchens in the Middle East. Spanikopita, spinach and cheese pastry wrapped in Phyllo layers is a popular Greek food. In Turkey, a similar bread called Börek can be filled with meat, cheeses and vegetables. In Egypt, these salty Pastries are called Gollash.

Dough manipulation is a delicate process. It must be kept covered with a damp cloth to prevent drying. It must also be treated carefully about tearing prevention. The finished result is best when each layer is brushed with butter.The pastry can also be brushed with egg yolk before baking on golden brown glaze.

phyllo dough should not be confused with inflated pastry. Puff pastries are produced by rolling butter or oil between layers for moist, scaly texture. Phyllo dough is fresh and softer, like fine sheets of paper. Phyllo dough and any pastry, although similar, have different uses and are usually not interchangeable.
