What is Champorado?
Champorado is a breakfast and side dish that comes from the Philippines. The food is made of sticky rice that is combined with cocoa to form a porridge. Filipinos usually eat hot food, with sugar, milk or cream poured across the top. Since fresh milk is not easily available in some parts, it can be served with evaporated or condensed milk instead.
Traditionally, Champorado is produced using blocks of bittersweet cocoa in combination with powder milk and sugar. The blocks are added to the rice when cooking, allowing you to melt the block and combine with rice. Outside the Philippines, chefs who do not have access to blocks can use cocoa powder or even Baker's chocolate as a substitution.

When preparing Champorado, the chef can change the consistency of the bowl by adding different amounts of water to the rice. Adding higher amounts of water causes the rice to expand and further the porridge increases together. Mixing less water with rice causes rice to be dry and cannot be together.
