What is Dodol?

Dodol is a type of sweet candy that is produced in Southeast Asia. The basis of the candy is rice flour and palm sugar, which are formed into dense, slightly sticky squares or diamonds. Dodol can be tasted in many ways, but by far the most popular in Southeast Asia is flavored durian . Other flavors include mango, apple, pineapple, coconut and vanilla beans. Candy is often produced before certain holidays and celebrations.

The process of manufacturing the plot begins with the addition of rice flour, palm sugar and coconut milk to the pan. The mixture is heated and stirring constantly. After the elements begin to meet and sugar is integrated, aroma and spices can be added to the liquid.

The DODOL mixture must be mixed constantly while cooking. This is because if the sweet mixture is too long without movement, it will burn and the structure and flavors will be destroyed. Mixing is initially an easy task, but as the water emerges from DodoLU, the liquid begins to intensify and eventually reaches a strong texture similar to rubber. In the last stages of the boiling process, the dodol may be so strong that during the attempts to have a pelvis, which means that it will take some effort and two hands to mix. Cooking time may take an hour or more, which makes it difficult for one person.

Some DODOL recipes are called to make the mixture tense part of cooking to remove any pieces of fruit, leaves and other aromatic elements. Some ingredients such as nuts may not be tense from candies and are intentionally added to provide a certain texture.
