What is fermented tofu?

fermented tofu is a solid bean curd that is dried in the air, sometimes until a fine mold is formed on the surface and then ages in a salt mixture from 12 hours to a few months or more. Unlike the light taste of normal tofu, the fermented tofu has a strong taste and odor that some people could consider unpleasant. Texture and acid odor are sometimes compared with old cheeses and the process used for fermentation tofu is in fact very similar to the process of soft cheese production. There are different types of brine and other methods that are used to create a fermented tofu, with the most pungent method to produce food called stinking tofu. Fermented tofu is often used as a side dish, as a spice, to thicken sauces or consume fried. During drying, it can be covered with straw or other type of free organic material. The brine mixture can have several adred ingredients on that that affects the color and taste of the finished tofu. One of the popular options is the type of fermented red rice that turns the tofu dark red and adds a slight taste of alcoholOlo. The next version includes the use of sheets into a brine that changes tofu with green color. Common additions of almost any mixture are sesame oil and chili peppers.

When using a fermented tofu when cooking, it can be heated and broken into pieces to help thicken the sauces. It can also be added to mixing fried foods and treated as spices. Popular preparation is also frying tofu and serving in slices with leaf green vegetables covered with sesame oil. Uncooked tofu is sometimes served with breakfast food or rice in a small separate bowl, so it can be eaten as a side dish.
