What is Ghevar?

Ghevar is a traditional Indian dessert associated with a festival called Teej. Ghevar, sometimes called Rajasthani Ghevar for its origin in Jaipur, the capital of Rajasthani, is sweet treatment prepared by soaking in ghee and milk. Oil, flour and sugar syrup are mixed together with ghee to form a dense, tantalizing dough. The dough is then fried to the cake, cooled, then served with pistachios, almonds or cardamom powder. It is easily accessible throughout India before, during and after the festival. Ghevar is fried in a pot, then removed and left to cool. These cakes are often graded, with up to three individually prepared layers that are cooled, immersed in sugar syrup and put on top of each other to create a delicious delicacy.

There are changes to this dessert. Some people add a creamy cream frost peaks of each layer. Others decide to sprinkle cardamom powder and pistachios or almonds on the layer when they are still wet sugar.
