What is Humboldt Fog®?

Humboldt Fog® is goat's milk with a very distinctive range of vegetable ash that passes through the center. It is produced by Cypress Grove Chevre in Arcata, California. This cheese is usually associated with Mary Keehn cheese manufacturer and is visually similar to Morbier. Most people consider this cheese extremely fine, because in 1998, 2002 and 2005 they won the first prizes from the American cheese company. While its defining properties in the visual sense are a line of ash and soft cortex, these features are basically tasteless. Like many cheeses, goat's milk, enzymes and vegetable ash are the only ingredients. Most of the taste comes from the quality of the milk used and developed the skills in the production of cheese.

In most cases, Humboldt Fog® is served at room temperature. As the cheese is constantly getting older, the softer part of the skin grows, reducing the crumbly center. Many people like the stronger taste of the skin, so it is not a sign that the cheese is no longer acceptable to eat. Cypress Grove Chevre is the producer of many cheeses of fine goat milk, but Humboldt Fog® is his signature cheese. This craft cheese is produced in relatively small doses and can be quite difficult to find far from California where it is made. Milk used for all Cypress Grove cheeses comes from Humboldt County Farms. Vegetarian Rennet is used, making it acceptable cheese for most vegetarians. Humboldt Fog® is named for the fog that is carried from Humboldt Bay, and in many ways this cheese is the interest of Cypress Grove in promoting local taste.

Recipes including Humboldt Fog® are quite diverse, but one of the most popular uses of this cheese is in salads. The thromp center is excellent in light spinach salads with fruit and walnut elements. Recipes involving fruit are very popular with this cheese and figs areOften part of Humboldt Fog® salads. It is even possible to create a curd cake from this cheese.

pairing for Humboldt Fog® are largely personal, but most people believe that this cheese goes well with sharp white wine. Specifically, it is assumed that sparkling wine, Sauvignon Blanc and Pinot Grigio are particularly well paired. Some people enjoy red wine with this cheese and Pinot Noir is considered acceptable pairing.
