What is Leipziger Lerche?

Leipziger Lerche is a sweet German pastry full of nuts and strawberry jam, which is one of the delicacies for which Leipzig is known in Saxony, Germany. lerche is in fact German for "Lark", from which the cakes were originally made before the hunting of birds was banned. Sweet pastries usually have pastries on the lid. It was so sought that the Lark population was in danger that King Saxony completely banned pastries. At this point, some bakers decided to come up with the sweet equivalent and Leipziger Lerche, as is now known, was created. The filling is made of almonds and other nuts that are common and mixed with egg, sugar, butter and rum. Again, variations were developed on the recipe and differ from chef to chef. In the center there is a spoonful of jam or cherry before filling the pastry with a cup of walnut mixture. This represents the heart of Lark.

The last step before baking is the placement of pastry on top noPart of bread lids. The name Leipziger Lerche has been protected by Saxonian Bakery Guild since 2004. Many bakeries in Leipzig still follow the traditional recipe of this sweet delicacy.
