What is Mishti Doi?

Dahi, or yogurt, represents a traditional meal in India where it can be consumed simple or used to cook different types of meals. One such Dahi bowl is Mishti Doi, which is sometimes known as Mitha Dahi. Mishti, or Prefix Mitha is an Indian term that means sweet or sweetened, and this food can literally be translated as "sweet yogurt". Mishti DOI is consumed in Indian homes and from street sellers, especially in the Calcutta area. Although this yoghurt food may seem simple, it actually requires a significant time of preparation, which leads to a lot to buy it from food in an effort to save time.

Mishti Doi comes in many variations that can be partially open to various yoghurt cultures, which serve as a basic component in this bowl. The version made of cow's milk is yellow, while the version made of buffalo milk tends to be white. The liquid and the condensed version of these dairy products can be used depending on the recipe and personal preference. All Mishti Doi have a dense texture and a shiny look when it is properly prepared. When the milk is heated, the sugar is added to give the bowls its characteristic sweetness. Milk is allowed to cook slowly and can be re -heated several times to give it the desired taste and texture.

Furthermore, yogurt or curd must be added to sweetened milk and mixed thoroughly. This mixture is placed in traditional clay or clay pots and then allowed to cool overnight. The clay pot absorbs excess moisture and gives Mishti Doi its thick texture. Some chefs can allow this product to sit even longer than they develop before consuming as a dessert after dinner.

In modern India and all over the rest of the world, Mishti Doi often purchases in grocery stores for the long preparation time. Some Indian expat can also make this food more in the oven than in the top of the stove, and thento cool it to prevent bacteria. This accelerates the cooking process and eliminates the need to let the food cool overnight. In general, the changes in the cooking process lead to changes in the texture and taste of Mishti Doi.

Traditional Mishti Doi has a very sweet taste, with hints of spicy taste of yogurt mixed. It is often very creamy when it is consumed and can have caramel tones depending on how milk is being prepared. Some recipes require adding cardamon seeds for taste, although it is largely a matter of personal preference.
