What is Nishiki Rice?
Nishiki Rice is a popular form of Japanese rice, which is often called medium grained rice. In fact, short -grain rice falls into the class, but is slightly longer than the average short -grain variants. In the US, when you shop for Nishiki Rice, which is grown mainly in California, you will usually see that it is packed as a medium grain. In Japan and Korea, where rice is very popular, packages may not be mentioned.
