What is a patatnik?
Patatnik, also known as Paten, is a potato cake from the Republic of Bulgaria Southeast Republic. Food requires relatively little ingredients. In addition to potatoes that are grated, food also contains onion, mint and oil, with salt and pepper added for taste. Some people also add flour, eggs or type of white Bulgarian cheese called sirene for richer food.
First, potatoes for patatnik are peeled and grated, then salted and deferred for about 15 minutes. Salt stimulates water to leak from the potatoes, then tense. The onion is then sprayed over the potatoes and the spices are added. This is a phase where some chefs prefer to add eggs or grated cheese to the mixture. Then the mixture is poured into a pan with a thickness of up to about 0.8 inches (2 centimeters) and the pan is covered with a lid. When the underside is golden brown, the cake is turned upside down, and the other side also fried to golden brown color.
In some versions of the Patatnik recipe, two pastry leaves are made of flour and small water and oil. One leaf goes to the bottom of the pan, the wicked potato mixture is poured on it and the other leaf covers it. This method of cooking is similar to the method of potato banit, traditionally baked Bulgarian food, which includes a mixture of eggs and cheeses poured between layers of pastry.
Patatnik has its origin in Rhodopes, a number of southeastern European mountains, which mostly cover Bulgaria. More than 80 percent of its area covers the South-Central area of the Earth, the rest in Greece, which borders with Bulgaria south. Patatnik is characteristic of the kitchen in Rhodopes. In some areas of Smolyan province, such as Nedelino, the cake is called Kashnitsa instead of a patatnik.
