What is Persipan?
Made mainly from sugar and ground apricots or peach cores, Persipan is a substitute for the dessert filling of marzipan. The term itself is a hybrid of the scientific name for peach, prunus persica and "Marzipan". The filling is created in the same way as Marzipan is made, but because the peach cores use instead of almonds, it is significantly cheaper than Marzipan. While Marzipan is created by grinding almonds and mixing with sugar, Persipan is created by grinding peach or apricot pit, often called cores and adding them to sugar. This combination creates a paste from which the filler is created, generally by adding more sugar. The paste will contain about 35 percent of sugar. However, the filling will be closer to 60 % of sugar.
Unlike Marzipan, Persipan often contains 0.5 percent of starch. Because the fillings are very similar to each other, starch is often applied, so persipan can easily be distinguished visually from Marzipan using iodine test. When the iodine solution comes into contact with the starch, it is stainedKrobial dark purple. They contain amygdalin, which, when it breaks up, becomes a cyanide. These cores are never safe to eat raw and must be processed before they are used to remove toxin. Toxin is also the reason why these fruit cores are often not used in food production and are therefore less expensive.
Persipan is generally considered to be lower quality than Marzipan. There is also a difference in taste some people prefer Marzipan. In addition, Persipan often contains more sugar than its more expensive counterpart to fight the bitter taste of the fruit core.
Although Persipan can be used as a substitute Marzipan in any type of bowl, commercially, fillings and cookies are the most common desserts that use replacement. Marzipan also often occurs in candies, but Persipan is rarely used commercially for candies. Paste, however, can be purchased online or in some European OBaskets for use in domestic desserts.
Because they are often a component in the holidays, both fillings are most often found around Christmas. In Germany, however, can be found all year round. In the United States, these fillings are much less popular. Although Marzipan can be found commercially in the US, generally around the holidays, most Americans are not familiar with Persipan at all.
