What is the saffron cream?

Saffron Cream is a strong sauce made of saffron fibers, strong cream and broth or fish stock. Smetan sauce is used to flavor rice, fish and seafood, fruit, chicken, meat or pasta. Some creamy sauces can also be made to serve desserts. Saffron fibers come from southwestern Asia, come from the Stigma of Saffron Crocus (Crocus sativus) flowers. Saffron cream sauce is often expensive due to the high cost of saffron thread and can be difficult and time -consuming for inexperienced chefs. Saffron fibers are cooked in chicken broth, white wine or fish butt for 10 to 30 minutes before the addition of cream. Some other spices or vegetables are sometimes added to the sauce - such as onion, garlic, spinach and tomatoes. After adding the cream the sauce thickens and cooks another minute or two to integrate the tastes. Saffron cream is then served hot for any number of meals.

Saffron Cream is usually produced as a spicy sauce for dinner type food, although it is also universal to accompany dessert meals. One version of the sweet saffron cream uses heavy cream, powder sugar and saffron powder whipping together and served on top of foam, pudding or cake. Another version uses coconut milk, sugar, saffron thread, corn starch and egg yolks. The cream is boiled and cooling and becomes consistency of the pudding, which is then served with the cake.

Basic saffron cream made only of sweet wine or milk and cream, omitting broth or stock, can be made with the addition of egg yolks and honey. This type of saffron is then used to make cakes and fruit drops or sauces. Most dessert saffron creams require saffron fibers to be soaked in water for some time before the sauce production, because it is not yet immersed by the broth. Many saffron sauces can also be made without adding heavy cream.
