What is Taleggio cheese?
Taleggio cheese is a slight cheese that comes from the Italian region of Lombardy and has a deceptively pungent and spicy aroma. This cheese, also known as Stracchino di Milano or Stracchino, is made of cow's milk and has a thin salted bark. Traditionally, taggio ages on wooden boards in caves for six to ten weeks.
