What is yukgaejang?

In Korea, some foods are more used than others for warm bodies during the rainy season, warm heart at the funeral or even fight the heat exhaustion with spicy. Soup called yukgaejang is a recipe for these occasions. It may seem that it is a simple shredded beef soup, but many chefs add a variety of vegetables and rich pepper flakes, pepper oil and fresh chili peppers to provide this nutritional food with a tasty kick of persistent heat.

Protein in yukgaejang may be a chicken, but most often it is shredded beef - the better the quality, the better the soup. To add a solid taste to these types of Korean soups, the upper wheel, sirloin, beef chest and even inner parts such as tripe are regularly used. Ordinary vegetables used to accompany meat are green beans, germs of beans, green and red peppers, onions, garlic and even fernbrake, which are cooked parts of ferns called bracken. Rice with noAsso adds to a soup or served on the side.

yukgaejang is produced like most storage soups. It starts by marinading pieces of beef or even a chicken - for food called dak yukgaejang - in simple ingredients such as garlic, salt, oil and some chili flakes to insert spicy in the bowl. Some of them had the meat soaked as long as in the fridge overnight, but just a few hours. The pieces are then cooked with chopped onions, soy sauce and more garlic in a pot with a beef supply.

When the meat is almost cooked, the chopped vegetables are blanched and then caramelized quickly in a hot pan before adding to the stock. It adds color, taste and nutrition. The last flavors include red pepper oil and flakes, chopped chily and finally leeks that cook the smallest time. The last step before serving is the tasting of the soup and the addition of Solia PEpr to taste.

This traditionally spicy yukgaejang is often less intense to include those that have less accommodating institutions. All or a lot of pepper oil and flakes can be hit from the recipe and leave only green chily and onion. Another option is to remove all spicy ingredients. Some Koreans believe that foods like spicy soup help not only warm the body during cold spells, but also acclimatize the body during hot temperatures.
