What are Kipfler potatoes?

Kipfler's potatoes are a type of potato known for their unusually long, thin shape. They are generally prepared either by cooked or steaming and can be consumed separately or incorporated into a salad or other food. However, due to their relatively low starch content, Kipfler potatoes are not recommended for crushing or frying. While Kipfler potatoes may not be as common as other potato varieties in countries such as the US, are often available in many gourmet food stores and special.

Maybe the most unusual feature of Kipfler potatoes is their shape. In general, they are relatively long and thin and often curvature at a relatively sharp angle at one or more places along their bodies. Their skin is usually tanned colors with darker spots randomly distributed above them and tend to have a wax gloss. Many of these potatoes are usually creamy yellow color. They can be cooked and eaten in their skin, although some people decide to peel the skin before cookingm. Many of them with a creamy and slight taste find that these potatoes need only adding only a pinch of salt or heels of butter to become a simple but tasty side dish.

After cooking, Kipfler potatoes tend to maintain their shape well, so they can be easily cut into wheels or sliced. Therefore, they are a good choice for meals in which softer potatoes could fall apart and create unfavorable porridge or grain. Examples of meals in which these potatoes work well include soups, salads and some saucers.

It should be noted that kipflers have a lower starch content than some potatoes such as Russets. Starch is responsible for creating a "fluffy" texture, which usually characterizes potatoes with mash and the interior of French frying. The payback of their relatively low starch content does not tend to bring good results when porridge or fried.

In general, it is quite easy to find potatoes Kipfler in and around them where they are grown. In countries like the US, other varieties such as Yukon Gold or Resset, they should be easier to find than kipflers. Yet it is often possible to buy kipfleers from farmers' markets, as well as from Gourmet or Special Food Stores.
