What is Curtido?

Curtido, also known as Curtido Blanco or Curtido Rojo, is fermented or pickled salad mainly made of cabbage. "Blanco" refers to the use of traditional green greenery in a bowl and "swarm" refers to the use of beet along with green cabbage. Many people compare Curtido to dishes such as Cole Slaw, Cabbage or Kimchi, and are usually found in Mexican and Central American cuisine, where it accompanies many meals. According to many people, it goes especially well with Papus Salvadoran. Various ingredients are used to produce Curtido, such as cabbage, lemon juice, carrots, spices, vinegar and onions. Fermentation is a traditional way to prepare food, but the pickling provides similar results in a shorter time. When the ingredients are allowed to ferment, the sugars disintegrate and leave a vinegar taste behind. During the pickling, this taste is achieved by adding some of the type of vinegar in the breaking solution.

Vinegar, leeks, chili peppers and salt are added to the mixture of cabbage and carrots. After combined, the mixture is allowed to sit at room temperature for several minutes and then cooled until it is ready for use. Other versions use, among other ingredients, or replace Jalapeños or Whey.

Curtido is well complemented by Mexican and Central American cooking. Many of these meals are rich and abundant, which makes Curtido the taste and texture. The vinegar in the bowl gives him a thin taste and crispy texture combines well with many meals. Some people prefer to ate their Curtido as a side dish and other prefer add it to beans, enchiladas or other meals.

Another version of food is made in Guatemala and is known as Curtido Rojo. This version usually uses other ingredients such as beets, green beans and vinegar red wine. Many people think,That this version tastes better when it is made using a sewing brine instead of fermentation of the bowl.

Although it is mainly used in Mexican and Central American cuisine, Curtido can also be used with a number of other meals. Many people enjoy it on things like hot dogs or other meals where Cole or other cabbage could be used. Others prefer to eat it as a snack.
