What is Ducan?
Unusual dessert, ducana is a type of dumpling made of sweet potatoes and coconut. Popular in the Caribbean Islands such as Grenadins, Antigua and St. Vincent, this dessert shares similarities to bread. Ducana is brewed by wrapping ingredients in foil, banana leaves or cloth and steaming or cooking. It is usually served with steamed or salted fish. The main ingredients are grated sweet potatoes, flour and coconut. Chefs also use raisins, sugar, salt and some spices such as cinnamon or nutmeg. To add another taste, add a little vanilla extract. Changes in the recipe include ingredients such as corn sugar, corn flour of butter and cassation.
You want to prepare ducana, cook coconut and sweet potatoes. Sometimes they use a blender or grate it by hand.
