What is Paratha?
Paratha is a type of fried Indian flat bread that can be eaten either simple or with filling. Bread is particularly popular in Singapore. The version of this bread is also consumed in Malaysia, where it is known as Roti cani . The fragile and scaly cooks Paratha rely on several times to fold the dough to achieve a unique texture of bread.
bread dough can only include flour, water and salt, but usually also includes sugar. Milk and eggs can also be added to the dough. Although bread can be cooked in oil, it is traditionally fried in GHE, a type of cleaned butter popular in Indian cuisine. Ghee is also often used to knead the dough and can be placed directly in the dough mixture.
to make parathha, dry ingredients and ghi, if used, are mixed together. Once the mixture is clustered, eggs, milk and water can be added. If Ghee is not used, water is included in dry ingredients. The dough is moved, erucely or in a blender using a blade attachment until smooth. Once smooth, it is created in the balls.
balls are coated with ghee, covered and allowed to rest. In traditional parath, the dough will rest for at least six hours and can even be cooled overnight. If it is chilled, the dough first allows you to return to the room temperature before it is reophed. Faster versions may only require rest as ten minutes.
After rest and returning to the room temperature, the dough is pulled into the thin sheets of paper. The coach can be introduced by a rolling pin or stretched with hands, but the Singapore version called Roti Paratha is traditionally thrown to stretch, similar to pizza dough. Once the dough is stretched, it is folded several times to form an airy layer.
Then the ghee is melted in the pan and every parathha brewed or flattened into the pan. Cooking takes only a few minutes on each side and bread should beinverted only once. The finished bread is golden brown.
If the fillings are added, they are placed in the center of the dough during the folding process and the dough is sealed. Then it rolls before frying. Filling can be cheeses, potatoes or spinach and include many different spices and the main ingredient.
