What is Sury?
Saury are long, slender fish similar to knives that occur in the tropical and mild oceans of the world. It belongs to the Scomberesocidae family and not only their thin bodies are characterized, but their tendency to remain near the water surface. They have the ability not only to jump out of the water, but also to slip along the top for a short distance. These small ocean fish are a common part of Japanese and Korean cuisine.
The large schools of the Atlantic Saury are found in the waters of the ocean between the eastern United States and the west coast of Europe, from Scandinavia south to the west coast of Africa to the Gulf Guinea. Members at this branch of the Saura family have an extended snout and a number of sharp, small teeth. Looking from above or down, these fish are masked by their silver belly and a green back. They feed smaller fish on the surface of the water and are attracted to fishing nets by simple use of bright lighting to lure large schools.
gRacile Sury, also known as Gracile Lizardfish, Slender Sury and Slender Grinner, come from the tropical waters of the Middle Pacific and Indo-Western and can be found on the north coast of Australia. This Sury usually does not get more than about 11 inches (28 cm). It gets descriptive names from large mouth and sharp teeth that are exposed even when the mouth is closed. The pale color with a red and brown spot along the upper body and white along the bottom, and gracile saura also has distinctive black stains on the tail.
also known as the autumn fish knife, because they are traditionally hunted and caught in the autumn months, the Pacific Sury is the type most commonly used in sushi. Originally from the Pacific Ocean and found in waters from Japan and China to the west coast of the United States, thousands of tons of these long, knives of similar fish are captured every season. Pacific or raw, Pacific Sury was once considered to be a poor man because of his shiny scale and overwhelmed fish aroma and taste. Members of the UPPER and Samurai class by sThey avoided them, but remained popular partly because their abundance and rapid reproduction make them economic.
