What is Aglio E olio?

Aglio E olio is a conventional Italian pasta, which is often associated with cooking a country home style, also known as Cucina Rustica. The sauce recipe has several variations, but all versions include olive oil (Olio), garlic (aglio) and cheese. It is traditionally served on long pasta such as spaghetti, vermicelli, angelic hair, fettuccine or linguine.

Although the history of Aglio E Olio varies depending on the source of information, its origin is often monitored into the Italian region Abruzzo. Abruzzo, isolated close to about 50 miles (about 80 km) east of Rome, was once awarded its insufficient development and poverty. In the last few decades, however, the region has experienced significant growth and is currently considered one of the most prosperous areas in the country. In most recipes, chefs are warned to take the garlic, which makes it bitter and generally inedible. The combination of oil and garlic is traditionally thrown by grated hard cheese such as Romano or PARmesan and long pasta. The choice of long pasta is attributed in some historical accounts to the fact that long pasta could be easier to make in home kitchens than fantasy short pasta.

Some instructions for cooking the bowl indicate the addition of flakes on the pepper, the seeds found inside the dried red chili peppers. Because it is still perceived as a low -level peasant food, Aglio e olIO rarely occurs in the offer of Italian restaurants. He is still considered a terminal in many southern Italian houses, where he is often chosen as a fast, satisfactory food or snack. Legendary stories, often considered comfortable food, often also depict Aglio E Olio as a digestive aid.
