What is Ajvar?

Ajvar is a food made of peppers, eggplant, garlic and other mostly vegetable ingredients. Many people believe that this food was created in parts of Eastern Europe, specifically in Serbia and other parts of the Balkans previously known as Yugoslavia. This meal is commonly served as spreading with bread and other elements.

Some chefs in the region where Ajvar is considered a traditional food, refers to it as a "vegetable caviar". As for the etymology of the name, it comes from the Turkish word havyar or caviar, the more commonly known food made of fish roe. Caviar is a luxurious meal in many countries around the world, but Serbian salad known as Ajvar is only a caviar in the name. Although it resembles a presentation of some types of caviar, this meal is a common harvest bowl made with the production of the garden.

In the harvest season, Ajvar has long been popular with people living in communities around the Danube River.
