What is dry curd?

dry chat cheese, also known as Quark or farmer cheese, is added without any other milk after creating cheese. This cheese is usually made of cow's milk, but also from goat's milk, especially common in Hungarian, Russian and Ukrainian cuisine. When an ordinary curd is produced at the end, salt and cream or milk are added to provide the cheese in the cottages with a known texture of cheese suspended in a creamy liquid. The process used to produce dry cheese cheese is basically the same as the production of typical food store cheese, except that the last step of adding salted milk or cream is skipped. This leaves only curd that was released from their whey.

Although dry chat cheese and farmer cheese are generally interchangeable, some milk brands push their farmer's cheese into blocks. This process can, to some extent, get the cottage cheese to lose its individual curd and create a texture somewhat like crumbly mozzarella. Some chefs find that the texture of this slightly pressed cheese also does not work in recipes requiring dry cottage cheese.
