What is Encebollado?

Encebollado is a type of fish soup. It is a national food of the Ecuador where it was created. Encebollado, a relatively simple meal, has only four primary ingredients: fish, tomatoes, onions and yuca. The soup is both pungent and spicy taste. This mixture, known as sofrito, also requires spices common to the Ecuadorian region such as cumin, chilli and coriander. There is also salt.
