What is Fahsa?
Fahsa is steamed meat made of lamb or beef that is cooked until soft and then mixed with spices and vegetables. It is one of the two national meals in Yemen, along with the salt , goulash, which is very similar to Fahs. There are very few ingredients in Fahse, which makes a heavy bowl of stew or cooked meat and onions. The finished stew is usually finished with a stimulus made of soaked pancake seeds and is served with bread. Authentic preparation uses a special type of stone pan known as Madra , although any pot or pressure cooker can be used. The meat can be cooked in water until it is very fine and easily divided into pieces or small pieces, or it can be quickly brown in oil to develop the color and then finish with the rest of the stew. Any method is used, the ultimate result should be meat in very small pieces that can eases eaten in one bit.
Other ingredients for the bowl include garlic and spring onions, which are fried in a pan before adding meat, whether it was cooked or not. Water or stock is added to the pot and the ingredients are allowed to boil until the liquid is reduced and it starts to lose weight, which may take several hours. After reduction, spices such as coriander, hot peppers and cumin are added, along with a little more water, which can decrease for the second time. Tomatoes are sometimes added at this point.
One traditional way of cooking and serving Fahsa is with a special type of Yemeni pot known as Madra. Madra is a thick wall, a stone pot that looks like a deep bowl. It can be used in a fire like any other pot and can also be used in the oven. Madra is made of stone, so it can keep the heat after a considerable amount of time is removed from the stove. This means that the Fahsa, which is cooked and served in Madra, can remain hot throughout the meal.
