What is fedelini?

fedelini is a type of pasta that is shaped similarly to spaghetti, but are thinner, it is only a little stronger than vermicelli. The name of the pasta is translated into "small faithful". It is not an incredibly common type of pasta outside Italy. There are some companies that produce fedelini and distribute it outside Italy, but just as there are few recipes that call specially for fedelini, there are also few stores that keep it in stock. Outside Italy, it is much more common that recipes require other types of thin pasta, such as vermicelli or Angel Hair.

This type of pasta is generally considered to be suitable for pairing with marinar sauce and a thin pesto sauce. This is because thinner strands of pasta make better work in collecting thin sauce than larger pasta, pasta in the shape of tape and pasta on the tube. This allows better transmission of sauce from the plate to the mouth, and therefore also offers better taste transmission.

Thicker, cream sauces are more often paired with widerPasta, such as fettucini and linguini. Fedelini is not commonly paired with red sauces made of meat. Sometimes fedelini is served simply with olive oil and garlic with maybe a few herbs as an ornament. This simple meal sometimes includes lemon juice and parmesan cheese. Those who love simple pasta, such as this, usually prefer thin pasta like fedelini.

This meal is as simple as it is tasty. First, roast three to four thin sliced ​​garlic cloves in four tablespoons (60 ml) of olive oil. Remove it from heat when garlic is a light color of gold.
