What is Horchaata?

Horchaata, also called Orxata, is a refreshing drink made of a combination of grains, nuts or tubers such as rice, barley or tiger nuts, with sugar and sweet spices such as cinnamon. The water is added to the primary component until the result is grain, vegetable or walnut milk, which is then spicy and sweet for the production of beverage. Food historians suggest that the beverage could originally be in the form of almond milk carried by Arabic passengers that were presented in Spain. It is especially popular in Salvador, where it can also include a new world taste of chocolate. Early use of the tigers of the nuts in Horchat was particularly common in Valencia, Spain.

Tiger matrix refers to long edible tubers from the plant Cyperus esculentus . In Spain, they are called Chufa , Horchaata made of Chufa is called Horchaata de Chufas . This variant of Horchaty is not common in South America because other sources of grain or nuts are much easier to obtain.

In Salvador, people can make their own Horchat, but there are many commercial varieties and powder Horchaata. Salvadorian Horchaata often does not use rice, but instead uses herbs and can use Calabash seeds or sesame seeds as primary grain or flavor for nuts. Horchaata of this type is tense so that the end texture is smooth and milk.

There is some debate about whether Horchaata should be prepared using milk instead of water. Some recipes require the addition of milk milk or other milk substitutes. Others say that the oldest forms of recipes probably did not include milk, because it would not hold well. Whether milk is used, Horchaata has a milk texture and consistency and is preferable to serve ice cold. HorchaIt is not commonly available in standard American grocery stores, even if you find its versions in Mexican and South American grocery stores. You will also find Horchaata served in some Mexican restaurants and restaurants with Salvadorian Cuisine.
