What is Markook?

Markook is a thin bread in the Middle East, which is traditionally cooked on Sai or on the type of convex metal grates. Also called saj bread or martouk , Markook is a similar pita bread. This bread is administered commercially, especially in Lebanon, can be consumed separately or serve as a wrap for meat or vegetables.

made in the levantin region for centuries, Markook uses active dry yeast for its rising agent. This bread also includes versatile flour, sugar and salt. Warm water is used for an active yeast and vegetable or olive oil is used for the growing process.

Like most yeast breads, Markook is produced by placing yeasts and usually sugar into warm water. Flour, salt and sugar, if not included in yeast, are mixed together separately. Mixed dry ingredients are then added to the yeast mixture after it becomes lively.

someHowever, the recipes may require a mixture to be poured into a dry mixture. When this happens, the dry mixture is created uphill, then an indentation is formed in the middle of the hill, often referred to as a well. The liquid is poured into the well and the wet and dry ingredients are finely mixed. Another water may be added at this time.

Once the ingredients are combined, the dough must be moved. The browns can be done manually or with a special dough connection to the blender. If kneading manually, the work surface should be flored to prevent the dough from sticking. When the dough is no longer sticky, kneading is complete.

The anger dough is then placed in an oiled bowl and rotated into a bowl, so all parts of the dough are covered with oil. Then it allows to get up in a warm place, covered with a damp cloth, for about two hours. As soon as the dough doubled in size, it is ready to be kneaded again.

Once the pieces are placed, they can be placed on Saj where they are cooked for very shortly on each side. The cooking process usually takes less than two minutes for each Markook .
