What is Mrouzia?

Mrouzia is a traditional Moroccan tagin or steamed, ate during Eid al-Adha, one of the most important religious Muslim holidays of the year. It is a sweet and spicy lamb bowl that is very tender because of the fact that it is slowly cooked for a long time. The meat used in a bowl comes from sheep that has been ritually killed as part of the EID al-Adha celebrations. Thanks to its position in the Mediterranean, Moroccan culture and food include a number of different styles - African cuisine, Mediterranean cuisine and Arab cuisine are combined into a tasty fusion of Moroccan tastes. Mrouzia is just one example of hundreds of fragrant traditional Moroccan dishes. They consist of a large round flat bowl and a conical peak that is in a bowl. It is designed so that all condensation created during the slow cooking process falls back into the bowl, allowing an extremely damp and tender finished product when cooking in Tagine. Mrouzia is usually served directly from the tagine bowl.

Usually, the Mrouzia is cooked using a lamb, but sometimes a goat or a cow is also used. The food consists of meat combined with onions, garlic, honey, almonds, raisins and a combination of spices, giving it a sweet and spicy taste. Used spices, which are usually combined into a paste using mortar and thickness and then wipe lamb before cooking, include cardamom, saffron, cinnamon, cumin and turmeric.

Traditionally, the meat is not brownish and all ingredients, except raisins and honey, are thrown into a pot and leave to boil at a low heat for up to 12 hours or more. Also, keep some people to add later, while others cook them with the rest of the ingredients. Honey and raisins are usually added at the end. The bowl can also be cooked, less authentically in a saucepan or pressure stove.
