What is Mutton Biryani?

Biryani is a mutton and a traditional rice bowl for Indian cuisine. The food usually consists mainly of mutton or lamb cooked together by basmati rice. Other ingredients traditionally include a very long list of aromatic, spicy and salty Indian herbs, yogurt, some kind of citrus aroma and saffron. It may also contain tropical flavors such as papaya, coconut shavings and chopped cashews. This meal is commonly served as steamed meat and can be accompanied by bread, although some find that the rice so fills that bread is not really necessary.

Most mutton biryani recipes begin with marinade. It usually consists of ordinary yogurt or lemon yoghurt cottage cheese mixed with spices. Usually this includes a combination of cardamom, garlic, pepper flake flakes, mint, ginger, onions, turmeric and saffron. Chefs can use all these spices or just choose their favorite.
