What is quindim?
Quindim is a traditional Brazilian dessert made mainly of coconut, egg yolks and sugar. It has a consistency as with pudding and is similar to the popular Spanish dessert. Quindim has a bright yellow color due to the large number of egg yolks in the recipe and is usually served in forms of individual cups or one large ring. The recipe was modified by slaves in the Bahia area in Brazil during the 17th century. At this time, coconut enforcement made the coconut into an integral part of the recipe, but the use of a huge amount of egg yolks indicates its Portuguese roots; Portuguese cooking traditionally uses a large number of egg yolks. Like the Brazilian desserts fios de ovos , papo de anjo , Queijadinha and the Portuguese dessert cocada amarel , egg yolks are a component of any quindim recipe.
The classic quindim recipe includes approximately 1 lb. (about 454 grams) sugar, anywhere from 15 to 20 egg yolks and up to half a pound (around 227 grams) butter. Usually, the generous help of coconut, as well as the vanilla extract, are also added. Other ingredients such as milk, coconut milk, water or even sprinkling parmesan cheese are sometimes combined with batter. Like most pudding desserts, Quindim is then poured into individual cups or a large mold located approximately half an inch (1.3 cm) water and baked at 350 ° F (around 177 ° C) until a golden colored bark is formed on the top of the pudding. After cooling for a short time, the still warm quindim is removed from the mold. Served cold, crust on the side down.
If Quindi is made in the ring, it can also be a knitted name quindao . It is removed from the mold when it is still slightly warm and inserted into the fridge. After thorough cooling, the pudding is cut into slices. Quindim/Quindao is served with a single slice and is sometimes decorated with fresh fruit.
The word "quindi" originates in the language of Bant Sub -Saharan Africa, which was undoubtedly the birthplace of many Brazilian slaves in the 17th century. They used this term of their mother tongue in the baptism of sugar and the hanger dessert. Freely translated "Quindi" means "gestures, behavior or funny qualities of adolescent girls."
