What is Rogan Josh?
Rogan Josh is a type of Indian curry, which is characterized by its strong, tasty red sauce and fine meat. He is associated with the Indian region of Kashmir, although Moguls could actually introduce it to the country. It generally consists of lamb or goat, which was slowly cooked in oil, yogurt and a mixture of many different spices. Despite the intense red shade, this is usually not a particularly fiery curry. Rogan Josh remains a common meal in northern India and is also a popular item menu in Indian restaurants in North America and Europe.
Most people attribute Rogan Josh to the Kashmir region in northern India. However, some argue that Moghuls was actually introduced to people of Kashmir. Regardless of what the real origin of the bowl is, its name provides a hint of technology used to prepare and its appearance. rogan translates into cleaned butter or oil in Persian, refers to how meat and spices are cooked while josh means hot or fiery, referring to darkThe red color of the bowl.
To prepare Rogan Josh, most chefs start with browning their meat choice - traditionally lamb or goats - in cleaned butter known in Indian cuisine as Ghee. The meat is then removed and a number of spices are added to hot butter in the stages - usually including garlic, ginger, pepper, cardamom, cloves, cinnamon, bay leaves, pepper, coriander, cumin and red pepper. Furthermore, the meat returns to the pan together with ordinary yogurt. The Lord is then covered and its content is cooked on low fire for one and a half hours, or until the meat becomes very tender.
There are a large number of variations of Rogan Josha. For example, some chefs add finely chopped tomatoes or tomato puree to their recipes. Others include pepper in their spices. These accessories change the taste of the bowl to azintensivate its red color.
Today Rogan Josh remains popular in northern IndiI and is also an item of menu in Indian restaurants in North America and Europe. Its popularity in the Western world may be partly due to the fact that it is very tasty but not intensively spicy. Yet when we ask, most of the restaurants adjust the heat of the bowl to suit the food. Rogan Josh is often served with a side of simple or spicy basmati rice, a soft flat bread known as naan or both.
