What is Sachertorte?

Sacertorte is one of the most famous Viennese desserts and widely considered a big delicacy around the world. Franz Sacher's chef and pastry expert developed the original recipe in 1832, who was never shared with the public. He invented this extremely thick chocolate cake for diplomats, politics and statesman, Prince Klemens Wenzel von Metternich.

Historians depict that the development of the cake was the result of a happy accident. Franz Sacher worked as a replacement for a regular chef in Metternich's facility when he created a cake to please the heels of Metternich's demanding guests. The guests were amazed at the texture and contrasting flavors of the cake and soon Sacertorta became the basis of many pastries and in many homes. The cake is then glazed with chocolate and often preliminary with chocolate shavings. Chocolate glaze is strong, like Ganache. There are different accounts about what type of cake is best. For many years Afsyn Ter Franz Sacher has opened the Sacher Hotel, and had a continued legal dispute with Café Demel. Demel was a competing confectioner who sold Sachertorte under the title "Original Sachertorte". Finally, in 1965, Café Demel changed the name of their version of the cake at Demel's Sachertorte.
