What is the song Gao?

Popular delicacy for the celebration of the Lunar New Year in China is a dessert born in Shanghai known as Song Gao . This dessert, which means a "free cake" in Mandarin Chinese, instead of giving up ordinary wheat flour for rice flour, along with sugar, some form of milk and a lot of red beans inside. Along the upper part of these cakes are red beans in full size azuki , each about as large and sweet as jelly beans.

azuki paste is produced by cooking red beans in sugar until they find sweetness. After draining water, the beans are usually crushed into the paste of red beans. However, some of the beans are preserved whole, often along with several different varieties to stick to the top of the cake before going to the oven.

The dough on the cake is often made in a relatively simple way. Sugar is whipped into eggs and then various ingredients are also distributed. Such ingredients include rice flour - SLAIt is possible, sticky variety, coconut milk or some other form of sweetened liquid, eggs mixed with rice flour - preferably a sweet sticky variety, along with a little milk or coconut milk, sugar and a dash of salt. These flavors cause the song Gao to be dense, sweet and a little creamy.

The song Gao is then poured into circular cake cans on the middle side, after grease or parchment paper is reduced, but only about one third full. The next comes the paste red beans and then the last layer of the dough. The completion of the touch is at the top of the Un-Mashed azuki .

Song Gao is one of several lunar New Year celebrations. Another is a similar dessert called nian Gao , made of coconut milk and shredded coconut as a star instead of paste and beans. Both cakes should bake at about about 350 ° F (about 177 ° C), about 50 minutes. Finally, it requires that the cake simply let cool and cut like a cake.

According to some sources, the famous Chinese Grand Hotel of Taipei had its restaurant Song Gao from shortly after opening in 1952, replaced by the ancient temple Šinto. Taipei is a city where the former leader of Chiang Kai-Shek died in 1975. The restaurant states that his wife's favorite dessert was Song Gao , which is the reason for its longevity.
