What is Tumbet?

tumbet is a term used to describe various roast eggplant food, potato dishes and ratatouille stewed meat that prevail in the Spanish cuisine of Mallorca. Although there are many different tumbet variations, the basic method of preparation for this roast vegetarian meal is relatively simple and consists of layering vegetables before inserting them in the oven. Tumbet can be consumed as a side dish for meat and fish, but is also often served as a vegetarian main dish. The vegetables are washed and chopped into small pieces; Potatoes are peeled, but not eggplants and peppers. Some olive oil is poured into the pan and heated. Chopped potatoes, eggplant and peppers are separately fried in oil and then removed from the pan and placed aside on paper towels to soak any excess oil.

In traditional Spanish cuisine, tumbet is cooked or cared for in a wide oral terracotta pot called Grixonera ; Terracotta is said to add a special taste to the vegetable bowl. The interior of the terracotta pot is brushed with olive oil and the fried vegetables are placed in the layers. The molten cheese and the thick tomato sauce can be evenly poured between each layer and the top. The bowl is then placed in the oven and baked at a high temperature of about half and an hour. After baking, the bowl should cool for a moment before it is ready for serving.

It can be used on the table to create a quite colorful presentation with red tomatoes, purple eggplant and red or green pepper. In addition to these traditionally used vegetables, various other vegetables can also be used.
