What is Wok oil?
There is no single type of oil that should be used in WOK. Since WOK cooking generally includes very high heat, it should be the best type of Wok oil that lasts high temperatures without break -up and smoking. High smoke oils include peanut oil, oil and grape oil. Special wok oils are also usually found in the Asian part of food in most supermarkets, and they are often flavored. Traditional WOKS are made of cast iron, while more modern WOKS can be made of carbon steel. Both WOKS types can withstand high heat cooking WOK, but also require oil to prevent food from sticking.
When many oils are exposed to high temperatures, they begin to crumble. This causes oil smoking. Different oils break down and smoke at different temperatures ateplota, in which the oil begins to smoke, is referred to as its smoke point.
Because when using wok is usually required high heat, the Wok oil should have very highthe smoky point. The peanut oil is traditionally used as WOK oil because it is able to handle high cooking temperatures. This type of oil also adds somewhat walnut appetite to some dishes and is often used to cook such meals as peanut chicken.
However,peanut oil is not the only type of oil that can be used in WOK cooking. For example, refined saffron oil has an even higher smoke point than peanut oil, making it excellent Wok oil. Refined corn oil and refined sesame oil are also acceptable oils in wok cooking. Although their smoke points are slightly lower than the mentioned types of cooking oil, cotton, almonds and terrible oils can also be used.
Although it is a very hunted oil, most Asian chefs generally discourage the use of olive oil as WOK oil. This is especially true for extra virgin olive oil that has a very low smokethe point. However, extra light olive oil is usually acceptable for use because it has higher smoke points than other types of olive oil.
Special WOK oils are also available. It is basically just a type of oil that has been flavored. Although it is not necessary when cooking in WOK, another flavor is attractive to many people.
