What is Zabaione?
coming from Italy about Millennia, Zabaione is a creamy, whipped dessert, which is also known as Sabayon or Sambayon in other European and South American countries. The combination of egg yolks, sugar, a touch of flour and sweet wine, such as Moscato or Marsala, is revived with an intense whipped cream in the bath of boiling water. The result is pudding, which is commonly served with fresh fruit or at the age of figs.
The Zabaione process is quite simple. In a metal bowl, the egg yolks are combined with a little over 1 oz. (35 grams) sugar for each yolk, then whisk to white and fluffy. Then, for each yolk, about 3 tablespoons. (44 ml) of sweet wine and a small pinch of flour is whipped in a short immersion in boiling water. When the mixture is firmly held on the beater or beaten, it is ready to serve. It should have a foaming texture as an airy pudding. The chefs will taste it when they think it's ready, then add more sugar or booze if desired.
There are a number of Zabaione variations. Chefs often use white and egg yolks. On other occasions, it replaces eggs with whipped cream or adds a small lemon juice for an acidic element. Alcohol is often omitted when children participate. All these recipes have in common is the flushing that surrounds the sweet air bubbles into the eggs or cream until the inflated and creamy consistency is achieved. This meal can be served in a bowl of berries or a wine glass with strawberries at the top.
