What are bigne?

Bigne are a type of French inflated pastry made of deep fried waist and coux dough. Finished pastries are served separately, coated with sugar or full fruit or other ingredients. The bigne dough is very simple, consisting only of water, eggs, flour and butter, although it is an accurate technique that causes the dough to rise and inflate. There is another version of Bigne, which includes less eggs in the mixture and uses yeast as yeast. Although they are most often associated with desserts, refreshments and sweet dishes, bigne is also used with spicy fillings. Once the liquid is smooth, the flour is added and stirred to the heat until the mixture is fired and begins to pull away from the sides of the pelvis. Alternatively, instead of water, milk or evaporated milk can be used to melt for more creamy taste.

The mixture of the flour is allowed to cool for a short time, then the eggs are added. Itis done at once, while stirring. Every egg that is added is mixed into flour until it is fully integrated before moving to another egg. Recipes for Bigne generally require adding large number of eggs because they are part of the bread jump process.

The same process and ingredients can be used to produce yeast bigne dough, except that less eggs are added and activated yeast is mixed. The yeast dough must also be allowed to relax and climb for several hours before it can be used. The resulting pastry has a slightly different taste than a yeast version and can eventually be a bit denser.

Traditional recipes require the finished dough to form in small balls and then placed in hot oil to fry. Another method is to place pieces of dough on a baking tray and bake them in the oven. If the dough is made without yeast, then steam from cooking and eggs causes to inflate and expand. Dough properties mean that each piece can spread up to five times its nEVAILED SIZE.

inside the bigne will be a small cavity where the steam has spread to cause the pastry to inflate. It can be filled with honey, sugar, cheese or fruit. Salmon, ham and other salty ingredients can also be placed inside.
