What are Chinese egg noodles?
Chinese egg noodles are wheat noodles made of eggs that add a rich taste, color and texture. Many Chinese noodles require egg noodles specifically, as is the case with Chow Mein. The noodles are available both fresh and dried in Asian markets, and are often available in dried form elsewhere. They can also be fresh at home, as well as Italian noodles. In general, they all cook quickly and require about three minutes on fresh noodles and up to 10 minutes for dried noodles. The noodles are often cooked until they are still slightly chewing, and then run out and soak in cold water to arrest the cooking process for an hour to keep them.
There are a number of use of Chinese egg noodles. They can be used instead of western noodles in many dishes, can be fried in fries and can be used as a base for mixed fried food in the sauce, as is often done with Lo Mein. The noodles are also fried in flat wheelers as a base for various meals or for ordinary eating. Crispy noodles are very popular in many parts of the world and sometimes usedbroken into small pieces like spices. Some chefs like to cool soft and throw them with oil and spicy sauce for a cold salad bowl.
