Fig columns are cookies that contain figs. Each fig is in the shape of a square with an outer bark dough for baked biscuits and inside thick figs. One great thing about making fig stripes is that you can prepare the dough and fill a day ahead if you both have in the refrigerator. The dough is usually much easier to introduce after it has been cooled for several hours or overnight. The rolled dough is shaped into a rectangle and then cut into about four strips. The FIG filling is located in the middle of each strip. Two long edges of the dough strips are pressed together than each strip sliced to create individual square fig stripes that havebe baked in the oven.

The basic recipe for fig stripes include the use of honey rather than sugar and adding some lemon or orange juice. Some bakers like to add cinnamon. Matics such as nuts or almonds can also be added to fig trees, but commercial figs of fig stripes may not contain nuts. Some commercial fig stripes add other fruit flavors to a fig filling such as raspberry.

Many commercial manufacturers of fig bars use two funnels to create fig columns. The filler and the dough move two separate infusions simultaneously to form a filled dough. Some manufacturers bake filled strips of dough before cutting them into cookies, while others cut fig stripes and then bake them.
