What are iron eggs?

iron eggs are traditional Taiwanese egg made of eggs that are repeatedly stewed in a mixture of spices and dried in the air. The result is a dark, chewing and tasty eggs usually consumed as a snack. It is unlike other boiled eggs in that it has a very dark color that comes from the soy sauce used. They are sold by many sellers of Taiwanese street food. On a slow day, the egg had to be restarted on many occasions when few people came to buy them. The resulting egg was deliciously chewing due to the loss of albumin with repeated cooking and a delicacy was born. Iron eggs are not the only version of the egg known in Taiwanese cuisine. Various other forms of eggs are located in offers and restaurants in the whole -water. One of the most famous is the thousands of years old eggs, which claims to be a cheese counterpart.

Another well -known Taiwanese egg is salted duck egg. Traditionally, they are produced by placing duck eggs in a mixture of salt and mud for a long time. Currently, duck eggs are more often soaked in brine, resulting in a very salty, rubber egg white and creamy yolk.

The second commonly found Taiwanese boiled egg bowl is tea eggs. These live by their names and they are just that - eggs cooked in tea. The result is brownish boiled eggs that have a hint of tea taste. As with iron eggs, all these eggs are popular asrefreshments or as an accompaniment to greater food.
