What are Kartoffelpuffer?

kartoffelpuffer are German potato pancakes made of grated raw potatoes and onions mixed with several other ingredients. They are also called latkes, reibeken and karoffelphankuchen. In the Catholic areas of Germany it was a traditional Friday evening dinner. Pancakes can be served either with sweet or salty side dishes, but the most common accompaniment is apple sauce. The onion is usually grated, but can be finely chopped and some recipes even use dried onions. Other basic ingredients are eggs, flour and salt. Darkening can be retarded by placed potatoes in cold water, and some recipes call it as a way to wash part of the starch of potatoes. Specifically, other recipes require the use of starch or flour potatoes. Whether starch is washed or carefully preserved, pancakes will cook better if all excess moisture is removed from the potato and many recipes require gratedThe pieces dried into the towel.

Characteristic outer and cream inside Kartoffelpuffer is the easiest to achieve with adequate oil in the pan. If the oil is hot enough, the cakes will be fresh and brown, but not greasy. To ensure that the pancakes cook, it must be relatively thin and even thickness. The texture of the pancakes will be best unless they are pushed down and if they are turned only once. Although they are sometimes cooked in butter, the more common choice is neutrally taste oil.

Traditional Kartoffelpuffer is made only of potatoes, onion, flour, eggs and salt. Many cooks, however, add additional spices, especially garlic and herbs such as parsley, leeks, chives and thyme. The crumbled bacon is a popular supplement.

Common sweet accompanying accompanying pancakes are in addition to apple rejuvenation and other fruit compote, sweetened whipped cream and even cinnamon sugar. Sour cream and creme fraIche are other popular accessories. Salty side dishes that often serve are bacon, sausage, liverwurst, smoked salmon and cabbage. In some parts of Germany, pancakes are served on black bread.
