What are Koulourakia?

Koulouraki is a type of Greek pastry that is light, only slightly sweet and usually served around Easter holidays. The main ingredients are butter, eggs, sugar and flour, although sometimes they are added flavors such as cloves, ouzo, nutmeg or vanilla. The shape of the Koulekium distinguishes them from a similar sweet pastry because the dough is often twisted, knit or curled. The surface of the pastry is treated with egg washing to help it brown and sprinkle with sesame seeds. The pastry is often consumed with tea or coffee or is served as a snack during the day. The eggs are completely integrated into the mixture. If other liquid ingredients such as vanilla, ouzo or cream are used, then they are also added to the wet mixture. This is usually flour, baking soda and a small amount of salt. Dry ingredients are added to the wet components and the whole mixture is mixed until the dough is fitted, but is not too sticky to the touch. At this point you can add any flavor - for example Mahlep , which is made of cherry or cracked almonds.

There are a number of ways to emerge. The most common way is to create a single rope similar to the length of the dough, join two ends and turn it once or twice until the dough gently pushes against each other. Another way is to take one length of the dough and create it into a spiral shape. Other shapes for Koulourakia include braids made of two or three separate pieces of dough, letters of the Greek alphabet and even the shape of the hand.

The dough is covered with egg washing in front of IT is placed in the oven for care. Washing, consisting of only eggs and water, is brushed over the surface of the uncooked dough. During baking, washing eggs will help create a roasted, glossy surface on pastry.
