What are risotto cakes?
Basic risotto cakes consist of clusters of risotto in the shape of Patty, creamy bowls made of rice, wine, stock, butter and cheese that were wrapped and fried. Risotto cakes are often prepared by residual risotto, so the somewhat demanding process of risotto preparation pays off in the eyes of some chefs. Variants of the basic recipe for risotto cake may require the inclusion of meat, cheeses, fresh herbs or vegetables. These cakes are an adaptation of the popular Italian fried risotto dish called Arancini. To create them, the cluster risotto is formed into a small patty and coated with bread crumbs.
