What are Whitebait?
Whitebait is a general term applied to young edible fish of many different species. In most parts of Europe, the young monitor is usually referred to as Whitebait, while in New Zealand and Australia, Whitebait is usually freshwater fish called galaxiids or members of the Galaxiidae. These young fish are smaller than adults of the same kind, usually measuring about one inch (25 millimeters) from head to tail. Due to their small size, the fish are usually cooked and eaten whole and in many parts of the world are considered something delicacies. The herring is originally from the Northern Pacific and the North Atlantic, but often migrates into inland areas such as rivers or bays to join. The woman lies out the cloud of eggs that her friend fertilizes externally. These eggs usually hatch within one week and the larvae appears. The larvae are shameful and transparent, after they have not yet developed a scale, but within one year they have evolved into a youthful sequence, which is caught and consumed as Whitebait. Their young people are often caught when they migrate upstream fishermen who are colloquated as "baits".
The practice of catching Whitebait is commonly referred to as "white". Because the fish are so small, they are usually caught in large groups in networks. Whitebaiting was once a great commercial industry, but in modern times it is strongly regulated and young fish can only catch independent fishermen. Due to the limits placed on the bait, their catch was considered a highly valued catch throughout Europe and Oceania. Young fish also enjoy China, where they are brought up on fishing farms.
There are many popular ways to consume these young, fine fish. A common preparation in New Zealand is the Fitter Whitebait in which the meat of the fishStir into a simple dough made of flour, water and eggs. This dough is then a tablespoon of hot oil and fried. Fish are also often eaten whole, usually mined in flour and fried in butter or oil. A small amount of pepper like Cayenne is sometimes added to the flour.
