What is anardana?
Anardana is a name for culinary spices made of dried seeds and pulp of some varieties of pomegranate ( Punica granatum ), which are too acidic to be fresh. It is assumed that the wild pomegranate, known as gift and grown in the southern Himalayas, brings the seeds of the highest quality for the production of sticky spices, although it is also made of refined fruit. However, pomegranate is preferred because it is easy to grow with almost no care or maintenance until the fruit is ready for harvesting. The fruit of a small pomegranate reaches a diameter of only 2.5 inches (6.35 centimeters) with hard outer and dark red to pinkish white seeds.
The name of the anardany comes from the Persian anar (pomegranate) and dana (seed). The spices are most often used in Indian and Pakistani cuisine to add meals fluctuations and sometimes in Persian or Persian food to replace the syrup of pomegranate. Used mostlyFor Aloun's vegetables, anardana is also sometimes used to flavor meat. In India, reduced pomegranate juice or grenadin is used to marinate meat because its enzymes are charged and add a fine taste. It is assumed that the anardhan spice creates a similar result when used in the same way.
pomegranate seeds and pulp are dried together to form anardhane, and due to their extremely sticky structure and reddish -brown color, they are sometimes referred to as "pomegranate molasses". The traditional drying method consists in spreading the pulp and the seeds to the roofs and allows them to dry in the sun for about two weeks. This method is still used to this day, although it is considered unhygienic, because the pulp is often covered with dirt and dust. Mechanical drying is now used more frequently because the fruit dries in a shorter time (5 to 48 hours in the food dehydrator) and the produceris more sanitary endel product.
Anardana powder and seeds are usually available to buy on the Middle East and Indian food markets. Powder spices are preferred for easy use in cooking, but anardana semen store longer and provide additional food texture. Pomegranate molasses, which contain both pulp and seeds together, can also be found for purchase and can be used similar to syrup of pomegranate. In powder form, spices are often added to spicy chickpeas or used in combination with other herbs and spices like marinade for meat and vegetables. The pomegranate molasses can be drizzled through pancakes or other sweet pastries.
