What is Bazlamma?
Bazlama is a type of flat bread that is popular in Turkey, which resembles Naan bread or a thick pita bread. It is traditional bread in rural villages and is often sold in markets. Bazalama can be served with any meal and can also be consumed alone, made in a sandwich or served next to curry.
For baslama, several different combinations of ingredients can be used. The most basic version contains only flour, water, salt and yeast. The flour can be white flour or a combination of white, wheat and possibly rye. Another version of the bread contains yogurt, which, in addition to yeast, provides another source of fermentation. Sometimes olive oil and some sugar could sometimes be added to the ingredients.
The dough is mixed as a typical bread dough, first proves yeast in warm water and then adds flour, salt and any other ingredients. The dough is moved and then leaves for several hours. It usually rises for at least three hours, and sometimes overnight.
After the dough rises, it is divided into a piecey and pieces are created in balls. Each ball is pushed or balanced into a large disk. The dough discs are cooked one by one.
In Turkish villages, Baz Lama traditionally cooks over a wooden fire. Each dough is placed on a flat clay or cast iron pan, which is then located directly above the fire. The bread is baked on both sides until it is brown and cooked. These flat breads can also be cooked in a cast iron pan or other heavy pan on top of the stove, where the same basic cooking procedure is monitored.
This bread is best served immediately after its cooking, but chilled breads can also be reopen. Ordinary bazlama with a little butter or olive oil was sometimes eaten for breakfast next to freshly cooked tea - in traditional cooking in the village can also be prepared teaver and fire. Butter breads are also a common accompaniment of main meals such as CURY or Granies during a later meal.

When someone orders the bazlamma, the seller divides the bread into two thin halves, then fills it with cheese or any other fulfillment of the buyer may want. The stuffed bread is then heated and served to the buyer.
